BeefFrom: dchan@pyrite.SOM.CWRU.EduDate: Mon, 30 Aug 93 3:52:59 EDTIngredients:-----------2 lbs beef round steak or boneless chuck2 cups water7 tbs peanut or corn oil1 cup thinly sliced onions10 cloves garlic, peeled and sliced thin3 tbs red hot 'Sambal Oelek' chili paste (available at Oriental markets)or use hot chili sauceSalt to taste1 cup cubed ripe tomatoesInstructions:------------1.Place beef in water in a 4-quart pot.Bring to a boil, then reduceheat to low and simmer for 20 minutes.Discard water and cool beefuntil it can be handled.Slice beef as thin as possible, then cutinto 2-inch squares.Let drain in a colander for about 10 minutesbefore drying with paper towels.2.Heat 4 tbs.oil in a 12-inch skillet set over medium-high heat.Add beef slices and fry for 5 minutes, or until beef is brown anddry.Remove and set aside.3.Heat remaining 3 tbs.oil in same skillet.Fry onions and garlicfor 3 minutes.Add chili paste, salt and tomatoes.Cook for 5 mins.more.Add beef anf stir-fry for 5 mins to coat slices anddistribute flavors.4.Serve immediately with rice (to reduce spiciness) and a cucumber/vinegar salad.Serve 4 as a main dish or 8 as a chiliheads on the net.It was taken from anewspaper article that appeared in the Thursday, Oct.21, 1993 issue ofCOUNTRY WORLD.This recipe (by Cathy Wilkey of Seattle) took the first place$25000 prize at the 1993, 27th Worlds Chili Championship in Reno,Nevada.3 lbs.tri-tip beef or sirloin tip, cut in small pieces or ground coarse2 tsps.cooking oil1 small yellow onion1 14 1/2 oz can beef broth3 1/2 Tbsp.ground cumin1/2 tsp.oregano6 cloves garlic, finely chopped3 Tsbp.Gebhardt chili powder1 Tsbp.New Mexico mild chili powder5-6 Tsbp.of California chili powder1 8 oz.can tomato sauce1 dried New Mexico chili pepper, boiled and pureed3 dried California chili peppers1 14 1/2 oz.can chicken broth1 tsp.of Tabasco pepper sauce1 tsp.of brown sugar1 limeDash of MSGSalt to tasteDIRECTIONS:Brown meat in oil for about 30 minutes over medium heat.Add onion andenough beef broth to cover meat.Bring to boil and cook for 15 minutes.Add 1 Tsbp.cumin and 1/2 tsp.oregano.Reduce heat to light boil and add half of the garlic.Add half of thechili powder, and cook for 10 minutes.Add tomato sauce and pulp from the dried peppers and remaining garlic.Addany remaining beef broth and chicken broth for desired consistency.Cook for one hour on medium heat stirring occasionally.Add remainingchili powders and cumin.Simmer for 25 minutes on low to medium
